I recently shared my Chili Mac and Cheese recipe over at SoFab Food. This recipe is a plant-based version of those boxed meat+noodle meals that kids (and some adults – no judgement) love. The cheese sauce for the Mac and Cheese portion of this recipe is made with cashews (but you also use sunflower seeds, almonds, hemp seeds, or a combination of nuts and seeds) and squash. The chili is a basic vegetable and bean chili BUT there is a secret ingredient to make this the flavours pop.
